From the old vines, great wine!
A Chablis of 50 year old vines. 25% is fermented in old vats, the rest on stainless steel, sur lie, for 12 months. During this process it’s stirred (batonnage). The wine is rich, full bodied, mineral with flavours of white fruits and honeysuckle.
Fish and shellfish, oysters.
