“Rascaña” from the winery Baldovar 923 ( D.O. Valencia ) presents a skin contact wine made of Merseguera and Macabeo, with an aromatic power of those varieties.
Rascaña 2021 is an exceptional wine in the “Orange” category, made by fermenting white Merseguera grapes with their skins. It stands out by avoiding post-fermentation oxidation, resulting in a rich yellow wine with just the right amount of tannin, reminiscent of a red wine from cooler climates.
The grapes for Rascaña 2021 come from high-altitude vineyards, and they undergo separate fermentations in open vats with manual mixing. The wine’s florist and press components are aged separately and blended before bottling to capture the most beautiful expressions.
In the glass, it shines with a bright yellow color and golden reflections. The complex aroma offers evolving notes of peaches, apricots, lavender, and pine resin, complemented by subtle hints of salinity and earthiness.
On the palate, it boasts a velvety and ethereal entry with a fresh, tense, and voluminous texture. Stone fruit flavors harmonize with elegant bitterness on a refined tannic structure. This is accompanied by a crisp, linear acidity, polished through exclusive aging on Merseguera lees.
