Prieto Picudo from a cave!
Alberto and his partners make wine in the traditional way. Under the granary of Spain, we find big underground spaces, a sort of caves, sometimes up to 9 meters deep. In those caves, there is a constant temperature all year round and that creates the ideal living conditions for fungus and yeast bacterias that flow around in the air, which are hugely important for the winemaking process. Usually, these yeasts and fungus’s are store bought as they are more reliable, but of course you do miss out of a little authenticity. This wine is made with the Prieto Picudo grape, a local grape variety that allows the making of a full and round wine, with heaps of fruit and with not too many tannins.
