David Butterfield fell in love with Burgundy some years a go and decided to start making it’s own wines; focussing on the vinification by buying the best grapes of the best plots.
This wine reflects the greatness of both, the winemaker as the plot: Les Embazées. Besides the greatness, it still shows freshness due to its non use of battonage ( process in which the winemaker stirs the yeasts trough the wine ). This is recognizable in all his cuvées.
