Dassai 39 is a premium sake produced by the Asahi Shuzo brewery in Yamaguchi prefecture, Japan. It is made from high-quality Yamada Nishiki rice, which is polished to 39% of its original size, resulting in a refined and smooth flavor.

The sake has a delicate aroma with notes of green apple, pear, and a hint of citrus. It has a clean and crisp taste with a slight sweetness, followed by a refreshing finish. Dassai 39 is often served chilled and pairs well with a variety of foods, including sushi, sashimi, and light seafood dishes.
