Crafted at the base of Mount Afuri by the pioneering Kikkawa Shuzo, Afuri Ringo Kobo Dry Sparkling is a vibrant, bone-dry sparkling sake made with the brewery’s signature ringo kobo — an apple-derived yeast.
This experimental sake radiates citrusy acidity and fine effervescence, offering a crisp and refreshing character that’s more akin to natural sparkling wines or dry cider than traditional sake. It finishes clean and sharp, with a whisper of green apple and mineral on the palate.
Kikkawa Shuzo is known for its innovative use of wild yeasts, and in this expression, the use of ringo kobo (apple yeast) adds brightness and lift, while traditional junmai brewing grounds the sake in umami depth.
