Gas Vari Tokubetsu Junmai Karakuchi is the driest sake in the Gas Vari family—designed with the same philosophy as the cuisine it was born to accompany: contrast, clarity, and balance.

Brewed by Rokka Shuzo in Aomori, this sake is sharp, structured, and refreshingly clean on the palate. It has subtle notes of toasted rice and citrus peel, with a mineral finish that cuts through richness and salt with ease.

“Karakuchi” literally means “spicy mouth,” but in the context of sake, it refers to a sake that is dry—low in residual sugar, with a crisp, palate-cleansing finish. This Tokubetsu (meaning “special”) Junmai is brewed with local rice polished to 60% and fermented at low temperatures to bring out its sharp profile without losing umami.

This sake was meant to pair with both grilled fish and Iberico pork, making it ideal for Mediterranean dishes where olive oil, salt, and depth of flavor play leading roles.

Suggestions

Salted cod, jamón ibérico, grilled mackerel, boquerones, or even manchego cheese. A dry sake for dry-aged flavors.
