Ryūsei Hibi Kimoto is a traditional sake from Fujii Shuzō, a historic brewery in Hiroshima founded in 1863, known for using the labor-intensive kimoto method. This technique relies on natural lactic acid bacteria to create a rich, umami-packed yeast starter, resulting in a sake with deeper acidity and complexity.

Made with Yamada-Nishiki rice polished to 60%, this sake shows a clear appearance and offers a delicate fruity aroma with hints of pear, apple, and fresh yogurt.
