Established in 1805 during Japan’s Edo Period, Gensaka Sake Brewing began as a local sake producer and remains in the same location.

The prominent “Sakaya Hachibei” brand takes its name from the company’s founder and predominantly employs locally grown rice from Mie Prefecture. The company emphasizes supporting local agriculture and preserves scenic landscapes for future generations.

Adding to their portfolio, “KINO” embodies the essence of ‘going back to farming.’ This sake pays homage to this philosophy by utilising Isenishiki rice harvested from the company’s own rice fields and brewed using the Kimoto method. Serving as KINO’s second cuvée, the aim is to craft sake that harmonises effortlessly with both individuals and the environment, all the while upholding the principles of local agriculture’s perpetuity.

“KINO” offers a sensory journey with its deep stone fruits, invigorating acidity, and well-defined structure. This distinctive sake is a testament to its usage of natural yeast and organic rice, embracing a low-intervention approach that results in a truly remarkable treat for aficionados of refined flavours.

Designed as an evening libation, Sakaya Hachibei encapsulates the essence of a daily indulgence that never loses its charm. The guiding principle behind the product revolves around fostering a sense of complete relaxation throughout the night, transcending the boundaries of a mere glass. The company underscores the significance of their sake as a culinary companion, harmonising seamlessly with a diverse range of dishes.
