Crafted by the historic Gensaka Shuzo, founded in 1805 in Mie Prefecture, Sakaya Hachibei Junmai Ginjo is a sake rooted in tradition and terroir.

Brewed with locally grown Isenishiki rice—a rare heirloom variety related to Yamadanishiki—this sake undergoes a slow Yamahai fermentation with natural yeast, resulting in layered complexity and depth.

Aged for at least four months before release, it presents a rich yet clean profile: dry on the palate with mellow sweetness, bright acidity, and a faint, pleasant bitterness that enhances its umami core. The finish is long and harmonious, making it a perfect pairing for delicate white fish, sashimi, or grilled vegetables.
