Tsuchida 12 Wild is a bold new release from Tsuchida Shuzo, pioneers of low-intervention sake.
Made using the ancient kimoto method and without any added yeast, fermentation is left entirely in the hands of nature—guided by the ambient wild yeast and lactic bacteria present in the brewery.
The result? A sake with an untamed, vibrant character that’s both refreshing and deeply expressive.
Brewed with Asahi no Yume rice polished only to 90%, and with 40% of the rice turned into koji, this sake is full of depth and umami while keeping a delicate structure.
Creamy and citrusy, with notes of yuzu, lime, and pear, balanced by a clean acidity and a slightly wild, living energy.
At just 12% ABV yet undiluted (genshu), it’s light but full of flavor—perfect for sipping on its own or pairing with a wide range of dishes.
