Aoki Sake Brewery, situated in the Uonuma region of Niigata Prefecture, known for its heavy snowfall, has been crafting sake for three centuries since its establishment in 1717. Aoki Sake Brewery’s sake, exemplified by Tsuruyo, is created by harnessing the abundant gifts of the snowy landscape and the time-honored techniques of Echigo’s master brewers.
Amidst Niigata’s diverse sake offerings, Tanrei Karakuchi (light, elegant and dry sake style) stands out with its Tanrei Umakuchi, preserving the essence of sake rice’s original flavour. Tsuruyo boasts a taste deeply rooted in Uonuma’s local culinary traditions. Uonuma cuisine, rich in dried fish and long-lasting pickles for winter storage, primarily features the seasoning of salt and soy sauce, favorued by the hardworking Uonuma residents.
Kakurei Junmai Ginjo, a junmai style sake that accentuates the rice’s natural essence, offers a light and fresh profile with delicate floral aromas. It has a soft, clean finish and brings out the best of the rice taste with a gentle round umami. This sake is made from Koshi-Tanrei rice, carefully selected from Niigata, further enhancing its unique character. It serves as the quintessential representation of Tsuruyo and is a versatile libation that complements a wide array of dishes.
