Matsuno Tsukasa Brewery maintains an unwavering commitment to the art of sake brewing, valuing authenticity and simplicity as their guiding principles. They meticulously select local ingredients, including sake-specific rice and pristine underground water sourced 120 meters beneath the earth from the Echigawa River’s underflow, originating in the Suzuka mountain range.

Their dedication extends to cultivating sake rice under direct supervision, followed by a painstaking milling process. Recognising the pivotal role of koji in sake flavour, they use the box method for koji-inoculated rice production. In-house yeast cultures, chosen to suit the desired sake style, are carefully nurtured.

Matsunotsukasa’s meticulous process involves small batch fermentation and on-site storage at controlled low temperatures to create sake of exceptional quality, marked by a distinct and rich flavour.

Their Junmai Daiginjo, Ryuou Yamadanishiki, affectionately known as “Blue,” encapsulates the essence of their local land and its people, reflecting the terroir of Ryuou. This sake captures the diversity of Ryuou’s soil, landscapes, village atmosphere, and the dedication of rice cultivators, resulting in a medium-bodied, fruity, and umami-rich profile with a swift, satisfying finish.
