Ippongi comes from Zen language meaning “supreme truth, a state that achieves the greatest knowledge.”The water used for this sake started off as snow on top of the mountains, then melted and filtered through the earth to an underground deposit. Making Yuki the perfect name for this brew, as Yuki means snowflake in Japanese.
